Delicate snowflake-like cheese gently descends, completely covering the tonkatsu. The visual of tonkatsu hidden beneath the thick layer of cheese is quite impressive. It’s different from the typical cheese-covered tonkatsu you might have had. Instead of having cheese inside the tonkatsu, the cheese is generously draped over the tonkatsu, creating a stunning presentation. As you lift a piece of tonkatsu, the cheese stretches out luxuriously. One great aspect is that you can roll the tonkatsu in the plate full of cheese, coating it beautifully. The Yu Lin Ji (Phoenix’s Chicken) tonkatsu exceeds expectations. The special soy sauce-based sauce combined with the vegetables adds a tangy twist. It lightens the potential richness of the tonkatsu. I dipped the perfectly crispy fried tonkatsu, just looking at its surface you can tell it’s cooked to perfection, into the Yu Lin Ji sauce, tasting it alongside the vegetables. The sweet and tangy flavor is simply incredible. I’m curious to ask the chef about the secret behind the special soy sauce-based sauce. I think I’ll have the Yu Lin Ji tonkatsu again when I come back.
