I haven’t been to Sinchon in a while. You can sense the master’s presence from down the alley. While other shops seem deserted, Sumire always has a line stretching from its entrance. It’s probably because the tantalizing aroma of grilling meat wafting out of the door whets everyone’s appetite. You won’t find it on map apps, but you can check their operating hours on Instagram @hokkaido.butadon.sumire.

What a sight to behold! The meat piled up like Mount Everest. This is their signature grilled pork bowl. Opt for the large size, and you’ll be greeted with a mountain of about 20 slices of pork belly. The meat leans towards the salty side, bursting with fiery flavors. Its chewy texture only adds to its allure. Despite appearances, it’s almost equivalent to 1.8 servings. The bowl may seem small due to the large pudin nose sticker, but don’t be fooledโ€”it’s quite substantial.

If you have a modest appetite, prepare to be challenged. The meat boasts a 7:3 ratio of lean to fat, becoming increasingly succulent with each bite. The robust saltiness of the tare sauce enhances the overall flavor, darker than Lily Collins’ eyebrows. Don’t forget the essentials: wasabi and pickled radish. They offer unlimited servings of pickled radish, pickled chili, wasabi, tare sauce, miso soup, and rice, all on the house. And their miso soup is simply divine.
