It’s best enjoyed with a simple sprinkle of salt. The meat is not greasy, allowing you to indulge in multiple pieces. Personally, the lamb ribs pair well with salt. The special brewed soy sauce is not overly salty. You can dip generously. The chopped green onion sauce was unique. Its pleasant saltiness complements the meat wonderfully. The texture of the raw ribs is also remarkably tender, akin to pudding. The proportions are well-balanced. They inquire whether you’d like to eat the lamb ribs with or without cutting off the bone. Naturally, eating it off the bone is recommended. The ease of tearing the meat off is delightful. The act of devouring it feels almost primal, making the dining experience joyful. Onions and scallions are provided as continuous refills, a perfect accompaniment to the lamb ribs.
With its unbeatable taste, this place has maintained its presence for years. They sell only 90 servings per day, so they might run out quickly. I visited the Seocho location since it’s challenging to reserve a table at the Hannam branch. The ambiance is cozy and great for dates. Reservations are available only after 1 PM on the same day. The system doesn’t allow reservations a week in advance. It seems like a precaution against cancellations. You can comfortably dine while seated. They cook directly on a Jingisukan grill loaded with 100% charcoal. The heat conductivity and temperature control are impeccable. Each spot has storage for masks and paper. Thoughtful details are scattered throughout the place. Overall, the high satisfaction level makes revisiting a must.
